Last week while the 8 year old was on spring break with his grandparents and this past weekend, I've been working on cleaning out the basement and garage to have a yard sale in a few weeks. Specifically we're trying to get a lot of the 8 year old's old toys he doesn't play with out of the way to make room toys he does play with. It's been a challenge because he doesn't like change and he doesn't like to give up things. I think it makes him feel like he's giving up control. However, he's saving his money for a kayak, and when he learned I sold some toys (that he approved of) for $40 last week, he's been much more motivated to clear out. Hopefully the motivation will last. We're about 3/4 the way done with his stuff.
Saturday the 8 year old went to a birthday sleepover at a friend's, so I changed up the meal plan and my husband and I grilled some pork chops for dinner instead. I made some little herb crusted red potatoes on the side and we had a spinach strawberry salad, thanks to spinach from a friend's garden. Sunday we continued our meal plan on a budget in honor of Food Bloggers Against Hunger. Yes, while we didn't eat everything on that meal plan in the order listed, we did indeed follow a meal plan designed for folks with a very limited food budget.
The 8 year old has a dentist appointment this afternoon, so I am making one of his favorites - tacos with refried beans - this evening.
Sunday - Pancakes, Berry Syrup, Bacon
Also make rice crispy treats for this week's desserts, mini quiche cups for my breakfasts, and salad dressing
Monday - Tacos, Refried Beans
Tuesday - Watermelon Shrimp Salad, Bread/Crackers
Wednesday - Southern Fried Fish, Rice, Salad
Thursday - Slow Cooker Bolognese Sauce with Linguini, Salad
Friday - Vegetable Quesadillas, Rice
Saturday - Out/Leftovers
