This recipe is so simple, it's more method than recipe. In the picture above, I've used a mix of frozen blueberries, raspberries and blackberries. You can also do this with one berry or cherries. Whatever floats your boat.
I served this yummy strawberry sauce on my birthday cake this week. I did mash the strawberries a bit here with a potato masher because they were very large berries.
Fruit or Berry Syrup
2 cups of fresh or frozen mixed berries
1 tablespoon sugar
1 tablespoon maple syrup
Cornstarch (optional)
Place berries in a small saucepan over medium low heat and sprinkle with sugar. Once berries begin to simmer, pour in maple syrup. Let mixture simmer 20 minutes or until it thickens, stirring frequently.
If the mixture doesn't thicken to your liking, combine 1/2 teaspoon cornstarch with 1 teaspoon of cool water until cornstarch is dissolved. Stir into the sauce and cook a minute or two to thicken.
Serve warm over pancakes or waffles, french toast, cake, or let cool and serve over ice cream.
