About Me

The group of families we go camping with every summer.  That's me in the pink on the bottom right.  My husband is beside me in the black and the 8 year old is above him in the red tie dye.  

My name is Laura, and I'm a foodie.  My husband and our 8 year old son live in Southwest Virginia in an 85 year old house called a four square with our YorkiePoo and a revolving door of small tropical fish we can't seem to keep alive.  Our neighborhood was one of the first "suburbs" of our town, built along the street car line and near a small village where we walk to frequently to shop at a local community farmers market and a natural foods co-op.  We also splurge and eat out in the village occasionally too.

My husband and I moved here in 2004 while I was pregnant with the 8 year old.  After a series of unfortunate job opportunities, my husband ended up out of work for nearly 3 years.  During most of that time  I was a stay at home mom, so things were tough.  To help us save money, I taught myself to cook all over again, started meal planning, and have cut back drastically on the amount of meat (especially red meat) we eat.

Aside from cooking, I love to read, hike, and go camping.  I also volunteer at the 8 year old's school and am on the PTA board.  In addition, I'm the den leader for his Scout den.  We are members of the local Unitarian Universalist Church.
