When we were in Virginia Beach a few weeks ago we ate at a lovely local breakfast and lunch place called Doc Taylor's. It was so difficult to choose one thing off the menu, but I did finally narrow it down to a grilled veggie wrap that was to die for.
My second choice was a salad with watermelon, shrimp and a poppy seed dressing that looked popular. I decided to give it a try at home. Now, I like watermelon, but I've never been big on mixing watermelon with other things. Watermelon and feta seems to be a popular combination, but I just haven't been interested. So I admit, I did try this with a tiny bit of trepidation.
This salad was wonderful. I loved the soft mildness of the shrimp combined with the sweetness of the watermelon and poppy seed dressing and the crunchy coolness of the cucumber and lettuce greens.
Because I'm only using 1/2 pound shrimp for two people, this salad still comes out to be very inexpensive.
Watermelon Shrimp Salad
2 1/2 cups mixed greens
2 scallions or spring green onions, finely sliced
10 cherry tomatoes, halved
1/4 cup cucumber, peeled and sliced
1/2 cup watermelon, diced
1/2 pound steamed shrimp, peel, deveined
1 recipe poppy seed vinaigrette
Divide greens between two large bowls. Top each bowl with half the remaining fruits and vegetables, followed by the shrimp. Drizzle each salad with half the poppy seed vinaigrette.
Serve with crusty bread.
Serves 2.
