Yellow Rice
I realized the other night when I made this fantastic dish by Scattered Thoughts of a Crafty Mom that I had never shared my yellow rice recipe with you. It's such a simple recipe, it's easy to overlook, but it's such a versatile side dish and good starter for more substantial recipes. The best part about this is, it's cheaper and healthier than those boxes or bags of yellow rice mix in the grocery store. I know exactly what I'm eating when I make it myself and it takes only an extra minute to or two.

Meal Plan Monday - Make it Work Edition
Due to expenses for my husband's birthday last week and the 8 year old's upcoming birthday in a few weeks in addition to both my husband and me expecting expense checks from our jobs that didn't come through, we got a little behind the 8 ball this week. Rather than dip into savings or our emergency fund, we decided we'd try to make meal planning work from what I had in my meager stockpile in the pantry and the freezer.

Chicken Fried Rice
I said last week that the cast iron skillet nachos were the last of my little camping series, however, as I started working on this post I thought I'd add it in too to show the diversity of meals you can make while (car) camping.

Bolognese Sauce with Linguine
On Tuesdays and Thursdays I keep the 8 year old's best friend after school until right at supper time. On Tuesdays we go to our house, and on Thursdays we give the boy an opportunity to be at his house. Unfortunately on Thursdays this means the 8 year old, and I don't get home until almost 6:00p.m. So Thursdays are almost always "slow cooker night." That way when I get home all I have to do is set the table, do some last minute prep, and put dinner on the table.

Saving Chipotle Chilies in Adobo Sauce
We like a lot of Tex-Mex/Mexican food around here. In fact I'd say we probably have at least one thing a week that would be considered Tex-Mex, whether it's tacos, Southwest Pasta Skillet, Spicy Bean Burritos, taquitos, or Roasted Tomatillo Salsa with Avocado. Sometimes I come across a recipe that calls for chipotle chilies in adobo sauce.

Weekend Recipe Review - Julia Child's Ham and Potato Casserole
I think this adaptation of Julia Child's Sausage and Potato Casserole, or Gratin de Pommes de Terre et Saucisson, I found over at Black Fox Homestead must be simplicity at it's best.
