We missed the local market last week due to our yard sale. I had every intention of taking a 30 minute break and driving down there for a quick shop around, but it didn't happen. And let me tell you, second week in I already missed it. But this week, even though it was darn chilly, we all tossed our jackets on over our Star Wars shirts (May the Fourth Be With You) and headed down to get our local goodies.
The zucchini and tomatoes are hydroponic and usually have fantastic flavor. I also enjoy the spring onions for a slightly sweeter mild taste to my recipes when I can find them. They saute up so nicely that they almost melt down into whatever you put them in.
At the grocery store on Saturday I found an organic whole chicken on manager's special for about $7.00. I put that in the slow cooker Saturday afternoon and evening, then picked the meat off the bones to make shredded chicken. Sometime this week I'll put the carcass, giblets, and vegetable scraps I've been saving back in the slow cooker to make a good chicken bone broth.
Sunday - Cinco de Mayo - Beef and Bean Taquitos, Tomatillo Salsa, Rice
Also make rice crispy treats, breakfast casserole, rhubarb muffins, and slow cooker whole chicken.
Monday - Chicken Bruschetta, Angel Hair Pasta with Asparagus
Tuesday - Swiss Steak, Mashed Potatoes, Asparagus
(Actually what I make isn't exactly Swiss Steak, but rather round or cubed steak with gravy, but we've always called it Swiss Steak)
Wednesday - Stuffed Zucchini, Salad
Also make chili. I've got the beans and the chicken cooked. I just need to toss it all together so on Thursday I just have to warm it over.
Thursday - White Chicken Chili, Salad
Friday - Out/Leftovers
Saturday - Something on the grill, Crash Hot Potatoes, Salad
