Meal Plan Monday - July 29 - August 4


Well I'm a little disappointed, but due to scheduling conflicts we ended up not making the stuffed eggplant last week.  We're going to try again this week.  We've got a busy week, with the 7 year old attending a very popular day camp that ends with a sleep over on Thursday night and some sort of production on Friday morning.  The only challenge with this camp is that it makes my work schedule and afternoon tight due to pick ups.  Because the camp is pretty far out of the city, we carpool with my son's best friend's family.  I've got the afternoon shift and two afternoons, after pick up, I've volunteered to take the boys to the pool.

Sunday - Pork Chops on the Grill, Baked Potatoes, Corn on the Cob
Pork chops seemed like a good choice.  I don't think we've done in a while. I found corn at the community market.

Monday - Slow Cooker Bratwursts, Fried Potatoes, Green Beans
Taking the boys to the pool this afternoon, so something fast and easy is a must.  This fits the bill.  Normally I cook my brats in beer, but I don't know how it will do in the slow cooker, so I'm going to stick to the recipe and use apple juice.

Tuesday - Chicken Pomodoro, Salad, Bread
One of my favorite new recipes.  I've made this several times since I discovered it this spring and love it.  Best of all, even the 7 year old loves the chicken and pasta portion, so all I have to do is not put the tomatoes on his portion.

Wednesday - Brown Butter and Bacon Tortellini, Salad, Bread
I really hate frozen peas, so I'm dropping the peas from this otherwise delicious looking recipe from Meet Penny.  But I've got plenty of tortellini in the freezer that needs to be used up, so this is a good choice.  Also this is the second day I'm taking the boys to the pool.  This looks like it will go together in minutes.

Thursday - Stuffed Eggplant, Bread
Giving my stuffed eggplant a second attempt the night the 7 year old will be having the end of camp sleep out.  I found some lovely patty pan squash and some small white eggplant at the community market, so both of those will be used somehow.


Friday - Grilled Bacon Wrapped Chicken Tenders, Cucumber Apple Salad with Fennel and some kind of starch.
I want to make these for the 7 year old since he missed out the first time.  I think he'll love them.

Saturday - Out
