Two Super Easy Sauces


Ever have one of those nights when you've got to get supper in the table in a hurry and you're not feeling inspired, so you pull out a tried and true meal?  For me that's usually breaded chicken with rice or angel hair pasta.  Sometimes I'll manage broiled salmon if I've found some on managers special.  But then...there's that look on your family's faces.  That look of resignation that you've just phoned it in for dinner tonight.

Believe it or not, a sauce can change a ho-hum meal into something more interesting.  Just ask Julia Child.  The woman was a master at sauces.  The good news is you don't have to be Julia Child to throw together a sauce last minute to transform your meal.  Oh sure, it probably won't live up to her standards, but if it satisfies your hungry 8 year old, there's no judgement here.

This post is two sauce "recipes" for the price of one - Creamy Pesto Sauce and Salsa Sour Cream Sauce - that use ingredients I almost always have tucked away in the recesses of my refrigerator.


Creamy Pesto Sauce

1/2 cup milk
4 ounces cream cheese
2 tablespoons prepared pesto

In a small saucepan, melt together cream cheese and milk until thin and creamy.  Stir in prepared pesto until the sauce is well blended and warm.  If too thick, add 2 teaspoons of milk at a time until desired consistency.   Serve over broiled fish, chicken, rice, or pasta.



Salsa Sour Cream Sauce

1/2 cup sour cream
2-3 tablespoons salsa

In a small saucepan blend sour cream and salsa until well blended and warm.  Serve over chicken, rice, or pasta.
