Wow! We had an exhausting weekend. Mid-week the mother of one of the 8 year old's friends asked if I would keep her two daughters Friday night and all day Saturday. We had a good time and they behaved themselves as much as two 8 year olds and a 4 year old could manage, but keeping up with 3 children all day is so much different than keeping up with just one.

This week also proves to be busy. I've agreed to keep an extra boy on Monday in addition to the boy I keep on Tuesdays and Thursdays, so every day this week has something extra going on. Hopefully we'll have a quiet weekend next week to recover from all the additional children.
Sunday - Rice Topped with Tomatoes, Zucchini, and White Beans, Salad with Homemade Ranch Dressing, Bread
Carry over from last week. The salad dressing turned out delicious, but a tiny bit thin. I need to remember not to add quite so much buttermilk next time.
Monday - Avocado Chicken Parmigiana, Salad, Cornbread
I saw a recipe on Pinterest that looked yummy, but rather than putting avocado on something with primarily "Italian" flavors, I'm going to adapt it to use more "Tex-Mex" flavors.
Tuesday - Cheesy Chicken and Wild Rice Casserole, Green Beans
I love that this casserole calls for a real cheese sauce and not cream of something soup. I just made a fresh batch of shredded chicken today, so I can make this in no time while the 8 year old and his friend play.
Wednesday - Winter Minestrone, Salad, French Bread
Can you say YUM? Although I did get funny looks at the grocery store deli when I asked for 1/4 pound of pancetta "as one slice."
Thursday - Stuffed Peppers in the Slow Cooker, Salad
My mom's recipe. It's wholesome, simple, and good.
Friday - Leftovers
Saturday - Out
