Meal Plan Monday - After Christmas Special


I had originally planned not doing a meal plan this week, but then I decided that it might be best to at least have a few meals in mind for later in the week.

We've been celebrating Christmas since Saturday, December 21 when we opened presents at our house, just the three of us.

Sunday - Tuesday - Visits with family


Wednesday - Panko Crusted Chicken with Angel Hair Pasta, Bread
I've got all the ingredients for this at the house, which will mean I won't need to run to the grocery store.  There will be some kind of vegetable too, but I'm not sure what yet.

Thursday - King Ranch Casserole, Salad
Every time I run across a picture of this, I want it again!


Friday - Slow Cooker French Dip with Horseradish Aoili, French Fries, Rolls, Salad
We really enjoyed this the first time I made it and I know my husband will love having it again.  The 8 year old loved it but had a difficult time chewing, so I've got to remember to cut his portion in to tiny pieces.  (He has a textural issue with beef sometimes).

Saturday - Slow Cooker Chicken Black Bean Tacos, Cilantro Lime Rice
These look like a big hit with everyone.
