Fruit Salad with Honey Lime Dressing


Big family gatherings and "breakfast for supper" nights call for fruit salad.  Everyone likes it and it's super easy to make.  My 8 year old loves that my fruit salad has just a bit of lime juice and honey for the dressing.  He told his Nana one day "Do you know why Mom puts lime juice in this?  It's to give it a little 'spark'," just like I told him when he asked.
You can use any fruit you like, but we especially like the combination of strawberries, pineapple and mandarin oranges and they are generally accepted by a large crowd.  Blueberries, kiwi and mango are good in this too.

Fruit Salad

1/2 pint strawberries, halved or quartered
1 15 ounce can mandarin oranges, drained
1 20 ounce can pineapple chunks, drained, 1 tablespoon juice reserved
1 tablespoon reserved pineapple juice
2 tablespoons lime juice
1 tablespoon honey
zest of half lime, optional

Combine fruit in large bowl  In small bowl, whisk together lime juice, pineapple juice, honey and zest.  Pour over fruit and toss gently to coat.
