Meal Plan Monday - July 22 - 28


The 7 year old and I both ended up with a little touch of the stomach flu on Friday, so we've got one carry over from last week.  Neither of us was obviously up to eating much Friday evening.  By Saturday, fortunately, everyone was healthy and we did take our overnight camping trip.  And can I say, we had a wonderful time!  It was so peaceful and relaxing on the river with friends, even the rain Saturday night on the tent did not bother me.

We're I am also gearing up for the Olympics Opening Ceremony on Friday.  I made and attempt at fish and chips a few weeks ago to post this week, but it was one of those foodie disaster nights in the kitchen.  We did end up eating the fish, and it was good, but very very ugly.  However, I am going to make fish the way I know how to on Friday, so we'll have good ol' fashioned Southern cornmeal coated fish fillets instead.

Sunday - Leftovers, Corn on the Cob, Sliced Tomatoes
I was tired when we got home from camping, didn't have anything defrosted and we had lots of leftovers from last week.  Good excuse to clean out the fridge.

Monday - Cajun Chicken Pasta, Salad, Bread
Carry over from last week.

Tuesday - Stuffed Eggplant, Bread
My vegetarian meal for the week.  This may turn out similar to my stuffed zucchini, but I'm hoping to alter the flavor a bit.

Wednesday - Chicken Cordon Blue Florentine Casserole, Salad
Looks like a good way to use up some frozen spinach.  I'm going to try to make a version for the 7 year old without the veggies.

Thursday - Red Beans and Rice, Bread
One of the 7 year old's favorites.  I must confess, this is one of those times I let convenience foods be the main meal.  We love Zatarans.

Friday - Fried Fish, Homemade French Fries, Slaw
Go Team USA!

Saturday - Out with my husband's best friend and new wife.
Looking forward to getting to know his new wife better.  I've only met her once, but she seems adorably sweet.
