Meal Plan Monday - December 2 - 8


Ya'll see my new banner for Meal Plan Monday?  I'm not much of a graphic designer, but I made it myself and I'm pretty darn proud if it, if I do say so.


Big week coming up.  The 8 year old has his school Holiday Program on Tuesday and my in-laws may drive up for it.  Usual Scouts on Wednesday; we'll be making individual time capsules.  I've got to print off some pictures of my Scouts in the community Christmas parade a few weeks ago and dig up four copies of our local paper.  (Rather than buying them, I'm trying to find four I can recycle once folks are done reading them).

The 8 year old and I went out to the Dollar Tree on Saturday where I let him spend a little money on anything Christmas related he wanted.  He chose some cute little swirly trees, a smallish wreath and a cool, but very glittery red star.  He paired the wreath with the star for a very unique, clever look and hung it on his bedroom door.  We did a little Christmas decorating this weekend, but we'll continue to decorate through the week.  Because we get a live tree, we'll wait until Saturday to get it set up.  If we buy it too soon, it will dry out.  And on Friday is the our city's annual tree lighting and Christmas festival.  Attending the tree lighting is one of our family's Christmas traditions.


Sunday - Tuscan Chicken Stew, Bread
I know spinach won't be in season, but we haven't had this in months.

Monday - Creamy Mushroom Soup, Salad, Bread
A Pinterest find that looks fantastic!  I'll be using vegetable broth to make this truly vegetarian.

Tuesday - Panko Crusted Chicken Breasts, Mashed Potatoes, Green Beans
My in-laws prefer very simple, "country" style meals, and I will need something fast and easy on Tuesday.  Breaded chicken breasts is a stand-by meal for me that I hope will fit the bill.  Normally I would serve this with angel hair pasta and something similar to my cilantro cream sauce, but I think mashed potatoes (with gravy?) would suit everyone's pallets better.

Wednesday - My Momma's Chili, Cheesy Cornbread
Fall means chili.  We'll probably have this a lot in the next few months.

Thursday - Slow Cooker Brats, Fried Potatoes, Green Beans or Salad
I need a slow cooker meal for Thursday.  I'm still using up all the potatoes people have given me of the the last few months.

Friday - Out downtown before the Christmas Tree Lighting.
Saturday - Petros topped with lettuce, tomatoes, sour cream and cheese
Like fall means chili, leftover chili means Petros.
