Meal Plan Monday - January 6 - 12, 2013


We get back into some semblance of a normal routine today as my son returns to school after an extra long winter holiday break.  Our school system has been experimenting a bit with the schedule the last few years trying to coordinate more with the school systems around us.  As a result, this year we had more than two full weeks off from school for our winter break.
The other thing we're beginning this week is a 100 mile challenge.  We, as a family are going to walk, run, bike, paddle, scooter or otherwise move 100 miles in 100 days.  Horseback riding and motorized vehicles don't count.  Since my son and I walk to school, I get in a mile every day just with that.  I'm trying to decide if I want to count that mile or move an extra one on top of our walk to school.  I'm keeping a close eye on the weather this week to see if we can fit in a hike along the Appalachian Trail this weekend.

I went through my cookbooks and "to make" file this weekend.  A lot of the recipes I chose this week, we haven't had in a long time and aren't items I've bookmarked on the web.  So not a lot of links or pictures this week.

Sunday - Chicken Paprikash, Roast Potatoes, Green Beans
I've made this once before and the "picky" non-tomato eating 8 year old sucked it down like there was no tomorrow.  Did I tell him it had tomatoes in it?  Are you kidding???  Unfortunately none of my pictures came out, which is why you haven't seen it on the blog yet.

Monday - Parmesan Beefy Skillet, Green Beans
A couple years ago when we were just getting by with the help of food pantry distributions, we ended up with a box of Parmesan rice mix.  It had a "recipe" on the box, which was basically to mix in a pound of ground beef with the mix.  I made it one night and the 8 year old exclaimed "Keep this recipe forever, Mom!"  I'm going to try to make this from scatch this time around.

Tuesday - Swiss Steak, Mashed Potatoes, Salad
What I make isn't really Swiss steak.  It's just round steak with gravy, but my mother always called it Swiss steak.  It was one of my favorite meals growing up and I haven't had it in a long time.

Wednesday - Corn, Black Bean and Onion Quesedillas, Cilantro Lime Rice
This seemed like a good vegetarian combination.  I might also add a bit of spinach too.

Thursday - Wild Mushroom Beef Stew, Salad, Bread
I'll be adapting a recipe I found in the little flyer that came with my CrockPot.

Friday - Rice Topped with White Beans, Tomatoes and Zucchini, Salad
We haven't had this in a while either.  I used to make it quite a bit for my mom's group when our boys were babies.

Saturday - Boys on own
I have a parenting meeting on Saturday, so the boys will have to fend for themselves. This usually means the 8 year old talks my husband into taking him to Taco Bell, but I always have high hopes they will eat up some of our leftovers.

    Congratulations on taking part in the 100 mile challenge in 100 days. There is nothing like walking to keep us fit. I walk a mile a day and love it when I return to my warm home when it is so cold outside, actually I sometimes find it too warm inside as I have become so warm from walking! Enjoy your day.
