Buffalo Chicken Wings


We don't watch a lot of sports around here because we're pretty strict about how much TV we let the 8 year old watch.  So generally when the 8 year old is awake or nearby, the TV is off unless he's indulging in his limited "screen time" for the day.  However we do like to watch the bowl games near the first of the year and we must watch the Super Bowl no matter who is playing.  And when we think of game time, our food of choice is buffalo wings.
My husband begged me for years to make buffalo wings, but I was too unsure of under cooking the chicken to do so.  However finally a few years ago he finally convinced to give it a try.  I will admit I still don't make the sauce, opting instead for the store brand version of Frank's Wing Sauce.  But I've got frying up the wings down pat now.


We always serve it up with a big raw veggie plate and ranch dressing to dip the veggies in.  Hubby isn't crazy about celery, and I don't care for blue cheese.  So we get a little nontraditional with the sides.  The measurements below will give you a fairly mild heat in the crust on your chicken.  If you'd like it spicier, increase the cayenne pepper or chili powder.  Sometimes I prefer to just have chicken tenders instead of wings, and they work nicely too.  They will not need as long of a cooking time, so watch them closely.

Buffalo Chicken Wings

1/2 cup all purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon chili powder
1/4 teaspoon salt
1/4 garlic powder
5 chicken wings, cut in half at the joint
1/2 cup wing sauce, at room temperature or slightly heated
Oil for deep frying

Mix flour, spices and salt in a small paper bag.  Shake 2-3 chicken wings at a time until they are evenly coated.  Place in a 9x13 inch baking dish (glass is best) and refrigerate at least one hour.

Heat 1-2 inches of oil in a large, heavy skillet to 375 degrees.    Fry the wings in hot oil for 10-15 minutes on each side or until wings begin to turn brown.  Working in batches if necessary.

Place wings on paper towel lined plate and keep warm in oven.  Once ready to serve, place wings in a serving bowl.  Add hot sauce mixture and stir to coat.
