Weekend Recipe Review - Astronaut Energy Bars


As soon as I saw Call Me PMc's Astronaut Energy Bars, I knew they were a go for the (now) 8 year old's birthday party.  He has made up this game with his best friend called the Power Game.  It's a role playing game (or RPG) that they say they are going to create as a video game, get rich and take over the world.  LOL

Well, the 8 year old decided it would make the perfect theme for his birthday party.  And he wanted me to serve, among other things, "snack bars."  I dropped the astronaut from the name of these goodies and simply called them Energy Bars, 'cause when you're gaming, you frequently get an energy bar or health bar.  Worked perfectly.

Oh my goodness, these were good.  We had 10 kids and 8 adults.  I cut these small, and I think we ended up with like 4 leftover.  They are also very very rich.  Call Me PMc uses peanut butter chips and peanuts.  I don't "do" peanut butter, so I used butterscotch chips instead.  She told me when I suggested it that her mother's original recipe for these called for butterscotch chips, so I wasn't too far off.  I would have used peanuts, but I forgot them and wasn't willing to go back to the store for them.  I think the saltiness from the peanuts would have been good to cut a bit of the richness.

I also made a second batch of these Tuesday to take to the 8 year old's school for a teacher appreciation lunch.  For that batch I subbed the mini chocolate chips for white chocolate chips and used all blue M&M's to represent the school colors.  I brought home an empty plate at the end of the day, and there were lots of sweet treats to choose from!

These are for sure going in my recipe binder as a go to when I need to take a sweet to a potluck or when we're craving something sweet around here.  They aren't healthy for sure, but they are obviously popular!

  1. Good Morning Laura, Astronaut Energy Bars sound very good to me, full of sweet chocolate and fun! You mentioned peanut butter should have been added, I had never eaten peanut butter until I visited Atlanta, when I was introduced to peanut butter and jelly. I thought it would taste dreadful, but do you know, when I tried it I loved it. I just couldn't imagine the combination of salt and sweet on toast. Goes to show you should always try new things.     1. Hello, Daphne! I should have clarified better. The original recipe calls for peanut butter chips, not plain peanut butter. I used to eat peanut butter, but as I've gotten older the smell of it gags me. I can't even get past the smell to eat it. Weird.... Hope you have a great weekend!
