Meal Plan Monday - April 21 - 27


The community farmer's market in the village near our house opened this weekend.  I was so excited to walk down on a cool, breezy Saturday morning with my new market basket that I'd won in a giveaway this winter.  I had already talked to my favorite farmer, Paul, via Facebook and knew he was saving me some asparagus.  The promise of fresh eggs, local raw honey, and spring onions also awaited me.


It was so nice to be down in the village again greeting friends I hadn't seen in a while and friends I'd seen a couple times that week already. Paul had two lovely bunches of asparagus set aside for me and had his charming wife Susan with him as well.  She usually mans a booth at the larger farmer's market downtown, but this early in the year, they didn't have enough for both locations yet.  Susan is the mushroom forager in the family, and while I didn't buy any, she has found some beautiful oyster mushrooms already this spring.

I'll be sad to miss next week's market as we hold our yard sale here at the house.  Maybe I can slip away later in the morning if there is a short lull and drive down for a quick shopping trip.  Meals are so much more interesting when a lot of the food is fresh and local.

Sunday - Salisbury Steak, Mashed Potatoes, Salad
Also make granola "cupcakes" for breakfasts this week, cook navy beans for soup on Thursday, and cut up (local) carrots for late-morning snacks.

Monday - Pancetta, Asparagus, and Parmesan Spaghetti, Salad
Also make pimento cheese for teacher appreciation event at the 8 year old's school.

Tuesday - King Ranch Casserole, Salad

Wednesday - Hosin Glazed Salmon, Asparagus, Rice

Thursday - White Bean, Spinach and Ham Soup, Salad, Bread

Friday - Something on the grill  (haven't figured that one out yet).

Saturday - Out/Leftovers
